The easiest way to stick to healthy eating is to experiment with different recipes and to never allow your mind to get bored. Today, I prepared a delicious lunch – this spinach pancake with salmon filling and it will be my favorite meal throughout the next couple days.
Ingredients:
1 whole egg
1 egg white
1 table spoon flax flour
1/2 parsley
a handful of spinach
black pepper
For the filling:
1table spoon curds or cottage cheese
1table spoon yogurt
1/2 table spoon Dijon mustard
about 20 grams smoked salmon
2-3 olives
Directions:
For the pancake:
Blend all pancake ingredients until you get a homogeneous mixture.
Spread and heat some butter on the bottom of a pan. Then pour the mixture and place a lid on top of the pan. This is really important, so your pancake doesn’t stick and so it can become fluffy and delicious.
When it is baked on one side, flip it and remove the lid. Bake for another 30-40 seconds.
For the filling:
Mix the yogurt curds/cottage cheese and mustard.
Move the pancake in a plate and spread the yogurt mixture on top. Then place the small pieces of smoked salmon and cut a couple olives.
It is so delicious and quick to cook.
