Ingredients:
1kg stewed , chopped spinach
1 Tbsp. butter
1 yellow onion, chopped
250 grams mushrooms, finely chopped
2 stalks celery
about 120 grams fresh parsley
500 grams ground pork sausage
1 tsp. kosher salt
1 1/2 tsp. black pepper
1/4 tsp. grated nutmeg
1 medium garlic clove, minced
2 large eggs
5 bacon slices
Directions:
1.Saute the spinach. I prefer placing it directly in the pan.
2. Heat the butter in a large skillet. Saute onions and mushrooms for 5-7 minutes. While onions and mushrooms cook,place the celery and parsley into a blender and pulse until smooth.
3. In a bowl, put the ground pork and add in spinach, salt, pepper, nutmeg and garlic. Add the mushroom and onion mixture with the pork and seasonings, along with the celery mixture and eggs. Use your hands to combine all ingredients.
4. Scoop a little from the meat mixture and place into ungreased muffin tins . Then place the lovely (;) ) bacon on top of each meatloaf muffin. Bake for 35-40 minutes.
