In my last post, I shared with you one of the main mistakes that we often make in our diet. A mistake that usually trips us on our way to our goals. This week, I am once again challenging myself to eat a variety of healthy foods and meals. I made these delicious, zucchini pancakes. They are really quick and easy to prepare and they can be modified in a lot of ways.
Ingredients for 3 pancakes:
2 eggs
1 grated zucchini
1/4 red onion (cut)
dill (I like its taste and I put a lot of dill)
1 table spoon flax flour
a pinch of salt
a pinch of black pepper
1/2 table spoon sesame seeds
butter for the pan
Directions:
Mix all ingredients and stir good. You will get a thick mixture.
Put some butter on the bottom of a pre heated pan.
Divide the mixture in three parts. Put the mini pancakes in the pan and put a lid on top.
Bake on both sides. Leave the pancakes to bake good so you can flip them easily. Make smaller pancakes so you can flip them.
Then sprinkle the sesame seeds on top.
Garnish as you’d like – some marinated, dried tomatoes, some cheese, olives, seeds, sour cream or a dip with curds.
