The last couple weeks, I made some experiments in the kitchen and they turned out pretty good. I love cooking healthy meals. I collected a couple recipes, but I haven’t shared them with you, because I shared the recipes you’ve sent me. This week, I want to show off with my best cooking creation- this raw cake.
I have a birthday tomorrow and I intend on preparing it for my parents- they are really skeptical when it comes to healthy food being delicious and I hope that this cake will change their opinion. This will be my triumph and my biggest present.
Ingredients:
200 grams raw walnuts
200 grams raw cashew
about 150 grams pitted dates
2 large bananas
cinnamon
1-2 table spoons natural cocoa ( depending on the intensity of the cocoa taste you’d like)
2 table spoons coconut butter
2 vanillas
Directions:
The base:
First, soak the nuts for 1 or 2 hours.
*I always soak the nuts before eating them or cooking with them. First, they become more delicious. Second, it is easier to blend them. Third, they become healthier, because soaking them unlocks the enzymes and other beneficial organisms and allows them to neutralize the anti nutrients, like phytic acid. In one sentence- in order for nuts to be healthy, you need to soak them in water.
Puree the dates. Add the walnuts and puree once again. Add cinnamon. I poured some water, while I pureed the dates, so I could make the mixture smoother and so I don’t break the blender.
If you get a more liquid like mixture, add more nuts. If it is thicker, pour a little water.
Then spread on the bottom of a cake pan.
The chocolate cream:
Puree 1 banana. Add cocoa and 1 table spoon coconut butter, 1 vanilla and puree again.
*I added more cocoa powder, because I find bananas and dates to be extremely sweet and I didn’t want the cake to become poisonously sweet. I decided that the bitter, more intense taste of the natural cocoa powder will neutralize the sweetness.
Spread the cream on top of the nut-date base.
Banana cream:
Puree 1 banana. Add the soaked cashew ( without the water!). Puree again. Add 1 table spoon coconut butter and 1 vanilla. Puree and spread on top of the chocolate cream.
I saved some of the chocolate cream for decoration.
Then place in the fridge for a couple hours. It turns out extremely tasty!
P.S. Mom, dad! Don’t you dare to say that healthy cakes are less tasty!
