As you probably noticed on my Facebook page( where I often share Beti’s meals), I am totally addicted to Beti Dermendjieva’s meals. Last week I once again wished, that Beti is waiting for me for lunch, with this delicious omelet. I immediately asked her to share the recipe with me and now I can’t wait to share it with you. Try it and share your opinion.
4 crab rolls
2 fresh onion
2 gloves of garlic
the juice of one lime or the juice of one lemon
a pinch of salt
one green leaf
Melt the butter in a pan. Then stew the crab rolls ( cut them in smaller pieces before that). Stir the eggs and add them to the crab pieces. Bake the omelet on both sides, until it’s ready,
Directions for the filling:
In order to prepare the guacamole : Take the avocado (after you peal it and remove the pit), together with 1/2 tomato and smash it with a fork, until you have a smooth, homogenous mixture. Add the previously cut onion and garlic. Stir good. Then add the juice of the lime, the pinch of salt and stir again.
Spread the guacamole mixture on one side of the omelet. Then on top, place the rest of the 1/2 tomato. Fold the omelet and place it on top of a green leaf. Decorate with olives and a piece of lemon!
