One of my favorite recipes is the coconut pancake with avocado filling. Here is another version of a coconut pancake.
2 small ripe bananas
2 large eggs, lightly beaten
6 tablespoons shredded coconut
1 teaspoon butter
1. In a medium bowl, mash bananas well with a fork. Add the eggs and the coconut and mix good.
2In a skillet, melt some butter. Pour 1/3 of the banana-egg mixture and bake from both sides.
If you’d like you could add natural cocoa powder and have chocolate pancakes.
