Yesterday was a baking Wednesday. I wasn’t sure what was gonna turn out, but I was sure that I wanted to make a healthy Easter bread. When I mixed the ingredients and when I tried the raw dough (because this is my favorite moment), I was captivated. It was so delicious, that I felt like scooping a couple more times, as I did when I was a kid. My first bake, turned out great, but there were some other things I could adjust, so I made a second try. The quantity is not huge, but I never cook in big quantities. If you want a bigger Easter bread, just double the quantity.
Ingredients:
150 grams coconut flour
4 eggs
50 grams melted butter
2-3 table spoons honey
100 ml almond or cow’s milk
vanilla
1 teaspoon baking powder
a pinch of salt
Directions:
Mix all ingredients and stir until you have a dough-like mixture. The dough looks crumbly and soft. But when you press it with your hands it sticks and it is easy to put it in the baking tray.
Put some butter on the bottom of the baking tray.
Heat the oven at 180 degrees C.
You can add raisins and walnuts in the raw mixture.
