I love pineapples. Actually you know that I am not much of a fruit lover, but if I feel like eating fruits- pineapple sounds great!
Today I will share with you two of my favorite recipes with pineapple. They turn out delicious! One is quick to prepare,the other one takes time!
First recipe: Pina Colada Pineapple Bars
Ingredients for 30 bars:
250-300 grams shredded coconut
2 cups filtered water
15 large Madjool dates
2 cups filtered water
2 large fully ripe organic pineapples
200 grams whole truly raw whole cashews, grind to a fine meal
Directions:
Soak the dates for an hour, before you start cooking.
Remove the top and bottom of one of the pineapples and core. Remove the outer skin down to the meat.
Dice enough of this pineapple to make 3 cups of small diced pineapple, reserve the rest covered in the refrigerator.
Place the soaked dates in a food processor and puree with 1 cup of the reserved date soaking liquid by adding slowly 1/4 cup at a time and blending until smooth.
Add the date puree, coconut flakes and cashew meal in with the pineapple dices and blend well for 2 minutes by hand with a spatula until well incorporated.
In an un-greased pan, evenly spread this mixture to fill the pan.
Cover and refrigerate for 1 hour or overnight.
Cut the bars in 30 pieces with a sharp knife.
Remove the cut pieces with a thin sheet cake spatula and place on the solid trays of your dehydrator and dehydrate for 5 hours.
Flip the bars over after 3 hours and continue to dry until medium chewy.
Take the remaining pineapple, remove the skin-top-bottom and lay on its side and slice into 1/2 inch rings.
Lay each bar on the slices and cut the pineapple to fit each bars evenly. Reserve the trimmings for another recipe.
Repeat with all of the bars.
Second Recipe: Roasted Pineapple
Cut pineapple in rings.
Soak it in liquor for 10 minutes.
Spread some butter on your grill.
Place the pineapple and roast until it starts to get a golden color.
Enjoy and don’t go overboard with it! You don’t want to get drunk 😉
