The other day, on my Facebook page, I posted the pic of the raw, homemade snickers, that one of my clients Daniela Dolapchieva prepared for me. Since a lot of people were interested in it, I asked her for the recipe and here I am sharing it with you.
Ingredients:
Base Layer:
500 grams raw cashews
2 table spoons coconut oil
2 table spoons honey
Blend cashew nuts in a food processor into a nut flour-crumble. Add in coconut oil, honey and salt. Blend. Pat down into a rectangle on wax paper,then freeze.
Middle Layer:
Raw Caramel:
250 grams almonds
6 medjool dates
1/2 tsp vanilla
2 Table spoons melted coconut oil
Reserve for topping:
1/2 cup chopped almonds
Blend nuts into a fine powder in your food processor. Add in dates, melted coconut oil, vanilla. Blend into a sticky caramel. Spread caramel out over frozen cashew base. Press in about 150 grams chopped almonds. Freeze for 1 hour.
Basic Raw Chocolate Recipe:
150 grams Raw Cacao Butter melted (or use coconut oil)
150 grams Raw Cacao Powder
150 grams honey
Melt cacao butter in a food dehydrator or double boiler. Stir all 3 ingredients together, into a smooth melted chocolate sauce.
Cut cashew/caramel block into small “fun size” candy bar pieces. Dip each bar into the raw chocolate, then set on wax paper and freeze to firm up. Make sure to “double dip” each piece again after the first layer of chocolate has set. I
If you don’t feel like making the raw chocolate, you can buy natural chocolate with a higher percent and just melt it, then dip the bars in it.
