It’s time for another Sunday cooking creation. This week I found a great recipe by Healthful Pursuit and I adapted it to my understandings about healthy eating and it turned out great! Check the website for more great recipes! they really have great ideas! So what is the recipe? It is a recipe for No Bake Frosty Banana Cream Cups!
Ingredients:
Chocolate base
1/4 cup milled flax seed
3/4 cup raw cashews
1/2 cup raisins soaked in 1/2 cup water for 40 minutes, reserve 2 tbsp of the water
1/4 cup cacao powderflesh from 1/2 vanilla bean or 1/4 tsp pure vanilla extract
Pinch Himalayan rock salt
Banana cream
4 bananas
1/2 cup full fat coconut milk
flesh from 1/2 vanilla bean or 1/4 tsp pure vanilla extract
Pinch Himalayan rock salt
Directions:
1.Put raisins into the blender. Pulse until they get the texture of puree. Add cashews,cocoa powder,flax seeds,vanilla and salt. Mix until they combine. Divide the mixture into 4 cups or bowls and spread it at thickness around 1/2inch.
2.Place bananas, coconut milk, vanilla bean and a pinch of salt in the blender and blend until smooth.
3.Add banana cream mixture on each cup.
4.Place the cups in the freezer for 3-4 hours and decorate with strawberries or bananas and cinnamon.
