I do not understand why people say that cooking takes a lot of time. Making excuses takes a lot of time. Tonight, I came back home at 8:30 p.m. I really felt like eating soup and I decided I was gonna cook one. And exactly 15 minutes later, the warm, delicious soup was ready and I couldn’t wait to eat it.
Ingredients for 1 big bowl:
3 florets broccoli (medium size)
2 florets cauliflower (medium size)
1/2 sweet potato (small or medium size)
1 carrot
1/4 red onion
3-4 sticks wild garlic
spices up to taste – salt, red pepper, black pepper, dried parsley and dill
If you want you can add 2 table spoons coconut milk or a bit of butter
Directions:
In a deep pan, pour hot water. It is important that the water is hot.
Then place all the veggies without the spices. Put a lid on and when the water starts boiling, leave it for 5-6 minutes. With a fork, check if the veggies are soft.
Then pour part of the water and blend the veggies with the rest. Add the spices and the wild garlic and blend.
The soup will be ready in less than 15 minutes and it is delicious 🙂
