A cake for one (#ifsrecipes). More often than not, people say that they cannot prepare healthy food and add variety to their diet, because they have nobody to share it with. Actually, cooking for one or two people is not time consuming and for 10-15 minutes, you can make a real cooking masterpiece, that will not only bring satiety to your senses, but it won’t interfere with your goals for a leaner and fitter body. I prepared this mini cake for less than 15 minutes and I left it in the fridge overnight. I woke up early in the morning, put it in a box and I took it for breakfast.
Ingredients:
For three small layers:
1 whole egg
1 egg white
1 table spoon quark/ cottage cheese
1 table spoon yogurt
vanilla extract
1/2 table spoon natural cocoa powder
2-3 table spoons eincorn flour
For the fruit topping:
1/2 peach
1/3 banana
1 table spoon yogurt
Directions:
Blend all ingredients(for the layers) until you get a homogeneous mixture. Meanwhile, heat a pan on the stove.
Pour 1/3 of the mixture in the pan and place a lid on top. The lid is really important, so the layers do not stick. When the layer gets fluffy (after about 90-100 seconds), flip it and bake without the lid (for about 30-45 seconds.)
Using the same method, bake three layers altogether and place them in a plate.
Then, blend 1/2 peach, 1/3 banana and 1 table spoon yogurt.
With a spoon, pour part of the topping on the first layer. Then put the second layer on top and spread some topping. Add the last layer and spread the rest of the topping. Sprinkle with some raw nuts and a few blueberries.
It is so delicious, that you will want to eat this every day – without guilt and while losing weight. 🙂
