As you know I love finding healthy alternatives to our favorite junk foods. This week I will share with you a great recipe for cauliflower lasagna. Looks like cauliflower is always there to help us prepare our favorite foods. Do you remember the cauliflower pizza? (HERE)
Ingredients:
For the cauliflower “noodles”:
1 head of cauliflower (about 1,2kg)
2-3 cloves garlic
1/2 tea spoon salt
1 tea spoon Italian seasoning
2 eggs
For the sauce Bolognese:
2-3 carrots, peeled and chopped
1 onion, diced
about 100 grams celery, diced
3 cloves garlic, minced
1tea spoon salt
1tea spoon dried basil
1 tea spoon dried oregano
pinch of red chili flakes
300 grams minced meat ( pork and beef)
a handful of dried tomatoes
a handful of diced tomatoes
about 300 ml. tomato sauce
1 cup bone stock
1/2 table spoon butter

a handful or two of sauted spinach
Directions:
1. Boil the cauliflower and then mash it.
2.Add the seasonings and the eggs. Stir well. Spread some butter in a silicone pan and spread the cauliflower mixture.
3.Bake in a preheated oven for about 40 minutes.
For the sauce:
Heat some butter in the pan.
Peel and cut the carrots, onion and celery. Put them in the pan, sprinkle some salt and the rest of the seasonings.
Saute for 4-5 minutes. Then add the garlic and the minced meat. Cook until the meat gets brown.
Then add the dried tomatoes, the diced tomatoes, the tomatoe sauce and the bone stock.
Stir and cook for another 15 minutes.
When the cauliflower crust is ready, take it out. Cut it into two pieces.
Build your lasagna like this:
1) about a cup of sauce
2) cauliflower crust
3) some more sauce
4) sauted spinach
5) cauliflower crust
6) the rest of the sauce
