
One of my machines- Rumi, cooks the most delicious meals and takes the most beautiful pictures! Yesterday she shared her lunch, which could really make anybody fall in love with healthy eating. Cooking is an art and Rumi definitely is a master! Here is the recipe!
Ingredients:
2 eggs
50 grams cottage cheese
2-3 cherry tomatoes
a handful of olives
spices:
salt
pepper
oregano
butter to grease the pan
Directions:
Scramble the eggs with a fork. Add salt pepper ( red and black), oregano and the cottage cheese.
In a pan melt the butter. Place the pre cut in circles cherry tomatoes and the olives.
Stir a couple times, till they start getting baked. Then add the eggs and the cheese.
Bake a little bit, then flip it and fold it. Bake on the other side!
