On days like today, I remind myself that healthy eating is not boring, when you leave your excuses aside and when you have the desire to cook something delicious. I went to visit my parents and they gave me a whole jar of turmeric. I was sure that I will use it for something, tonight. I came home and I had a head of cauliflower. And I immediately decided to make cauliflower mash. It turned out to be a great cauliflower mash with coconut and turmeric and it was accompanied by turkey with a little soy sauce and asparagus. And as you know I never take way too much time for cooking, prepping the whole meal took me exactly 10 minutes.
Ingredients for 1 portion:
For the cauliflower mash:
4 big florets cauliflower
a pinch of salt
a pinch of turmeric
1/2 teaspoon butter
1 table spoon coconut flower

For the rest of the dish:
150 turkey meat
5-6 asparagus
soy sauce
1 teaspoon mustard
black pepper
Directions:
1.Turn on two of the hot plates. You will place the pot on one of them and the pan on the other one. I always use hot water, when I want something to boil faster.
2.Put the cauliflower in hot water. Wait for the water to boil and then place a lid on top and leave it for 60-90 seconds.
3.Remove the water and put the cauliflower in the blender. Blend and you will get a smooth mixture. Then, add salt, coconut flour, a pinch of turmeric and butter. Blend again and the mash is ready.
4.Parallel with prepping the mash, put some butter in the pan. Place the asparagus (I cut them in half) and the small pieces of turkey. Sprinkle some black pepper, soy sauce and with a teaspoon spread the mustard on top of the meat.
5.Add 50-60ml. water and put the lid on top.
