When I was younger, pancakes were just one of a kind – my favorite pancakes with a ton of chocolate. Today, pancakes bring me the same feeling – of care, attention and there is such a variety of tastes and besides that I make a healthy version of them. Back in the day,s I thought that making pancakes takes a lot of time. Now I know that a healthy pancake has enough nutrition and you need one bigger or two smaller pancakes to have satiety – of both the body and the mind. And you can cook them in less than 10-15 minutes.
Today’s breakfast is – apple pancake.
Ingredients:
2 table spoons flax flour
2 dates, pitted
1 teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon sea salt
1/3 banana
50 ml. coconut milk
2 eggs
1 grated apple
1 teaspoon vanilla extract
2 teaspoons lemon juice and zest
nuts for decoration
butter for the pan
Directions:
Puree the dates and the banana. Grate the apple.
Whisk the eggs and add the dry ingredients, the milk and the lemon juice. Stir good, then add the fruit mixture and stir again. If the mixture is too thick, add some more milk. If it is too liquid add some more sesame or flax flour.
Then spread some butter ina pan and pour the mixture. Put a lid on top. The pancake gets fluffy. WHen it is ready on one side, flip it and bake without the lid.
If the sweetness is not enough, add one teaspoon honey and decorate with nuts and fruits.
