A couple years ago, I lived in the USA. Back then I didn’t care about healthy eating and I tried every single food. My favorite fast food restaurant was – Taco Bell. The food there, reminded me of one of our Bulgarian fast foods.
Throughout the years, since I started eating healthy, I am constantly trying to create healthy alternatives to the foods I used to eat. I love cooking and every time when I prepare something delicious and healthy, this increases my enthusiasm and encourages me to keep going and trying. I love saying that preparing your own food, changes your perspective about diets. Making the effort to cook your food, shows you that healthy eating is not boring and that you can prepare a lot of healthy foods that your body loves. Foods that keep you satiate and help you achieve your goals.
I just came back from my Upper Body workout and I needed something delicious and nutritious. I prepared this Taco.
Ingredients:
2 eggs + 2 egg whites
3-4 table spoons flax flour
100 grams minced beef
1/2 tomato
1-2 mushrooms
3-4 Brussels sprouts
1 pickle
1/4 avocado
black pepper
dried parsley
red pepper
caraway
something spicy
salt
sesame seeds
some butter for the pan
Directions:
For the pancake:
Stir the eggs and the egg whites. You could use less eggs, if you need less food. Add the flax flour. Put some butter on the bottom of the pan and pour the mixture. Put a lid on it and bake. The pancake will get fluffy. Turn and bake on the other side without the lid.
For the filling:
Mix the minced meat with black pepper, caraway, red pepper, salt and parsley.
Put the minced meat and all the veggies cut in pieces. Put the lid on top and stir every now and then. When the meat is ready, pour the mixture on the pancake. Cut the avocado and sprinkle some sesame seeds. Decorate with some iceberg salad.
