I love autumn – this is my favorite season.
For some people autumn invites melancholy, for me it invites emotions – in their whole palette. For me autumn is a symbol of change and of a never – ending cycle. It is a symbol of the temporary nature of everything and of the beauty of something old dying, so something new can be born.
For me autumn is like an old friend, who always returns at the same time and awakens memories, which remind me of the long path, that I have traveled. For me, autumn is some tears, a little bit of sun rays, a lot of colors, the gentle touch of the wind and a beautiful nature, that is always there to shelter me when I feel like a foreigner.
For me, autumn is the smell of pumpkin and cinnamon and my biggest inspiration.
That is why, I bought a pumpkin and I decided to prepare a quick and delicious dessert.
Ingredients:
500 grams pumpkin
2-3 tablespoons natural cocoa powder (depending on the intensity of the chocolate flavor you want)
vanilla
a couple almonds or cashew for decoration
Directions:
Boil the pumpkin. While it is still hot, drain it from the water and puree it. Add vanilla and cocoa. If you want it to be sweeter, add some honey. Personally, I like the natural sweetness of pumpkin.
Then leave it in the fridge for 1-2 hours. As my sister said: “This is better than Nutella.”
Why eat junk when we can prepare something healthy and eat it without feeling guilty, or without feeling like crap after that?
Pumpkin is a great source of carbs. If you need a chocolate taste, you can prepare this dessert and the only thing you should be cautious about is the quantity you eat. Pumpkin has about 5 grams of carbs per 100 grams of weight. This means that 300 grams pumpkin, have 15 grams of carbs. I think that you could allow yourself a dessert like that! And cocoa makes the flavor more intense and even 2-3 table spoons of the dessert are enough to kill your chocolate cravings.
