I did an IFS Summer Challenge in Bulgaria. I haven’t done it for my English- speaking followers, but I promise I will. There, we share a lot of useful advice about nutrition and people share their food struggles, share their meals and recipes. The other day, one of the participants – Savina Belcheva shared her dinner and her healthy dessert – Oreo cookies ( a healthy version). I couldn’t resist but cooking them. I modified them a little bit and they turned out delicious.
Ingredients for 12 cookies:
120 grams dates (1/2 cup pitted) – pre soak them for 30 minutes
water
120 grams (1/2 cup) natural cocoa powder
vanilla
For the filling:
2 bananas (another option is to puree the bananas with some coconut butter and add some more vanilla)
Directions:
Puree the dates. Add cocoa and vanilla and if the mixture is too thick, add some water. When you get a smooth mixture (but not a liquid like), you have the cookies. Shape them in cookie like shape.
Cut the bananas in circles – 1.5-2 cm. thickness.
Stick two pieces of cookies with one banana in between.
Leave in the fridge and you have healthy Oreo cookies.
