Last week I had a challenge for you. I love the recipes you send me and the passion you show in giving your best to lead a healthier lifestyle. That’s why I decided to start something new- to introduce the opportunity for a guest post or in other words, to give you an opportunity to share your experience. We will start with the Culinary Column.Here you can read more. The first recipe, I received is from Malina Lazarova- these delicious vegetable pancakes with guacamole. The initial source of the recipe is Nadia Petrova from Nature Insider.
Ingredients:
12 vegetable pancakes:
400 grams boiled broccoli
1/2 cup raw cashew
3 eggs
a pinch of salt
coconut butter
spices up to your taste
guacamole:
1 ripe avocado
the juice of 1 lime or 1/2 lemon
1 small tomato and 6-7 cherry tomatoes
1/2 stalk of parsley
2 sticks green onion
5-6 leaves basil
a pinch of salt
Directions:
Blend the nuts. Add the broccoli and blend again.Add eggs, salt coconut butter and other spices. Blend until you get a homogenized mixture. With a spoon, shape pancakes in the baking pan. Bake on 180 degrees C, for about 20 minutes.
Peel the avocado. Remove the pit and smash it with a fork. Pour the lime juice.
Peel the tomato, remove the juicy part and cut in pieces together with the parsley, green onion and basil.
Mix with the avocado paste and add some salt.
There we go! you just prepared the most delicious vegetable pancakes 🙂
