It’s Sunday and it is time for delicious, healthy recipes. This week I will suggest you something kind of exotic, extremely delicious and beautiful, i.e. tarts with mango and berries. I stole the idea from The Fit Chen, so I encourage you to visit the website for more great, healthy ideas.
250 grams raspberries
120grams goji berries
For the crust:
1table spoon honey
250 grams walnuts
1/2 tea spoon cinnamon
1/4 tea spoon grated ginger
60-70grams shredded coconut
In the blender puree the mangoes. Pour 1/3 of the puree in a separate bowl, the rest leave in the blender.
Add half of the berries and half of the goji berry in the blender, to the mango puree. Blend again.
Then pour half of the new mixture in another bowl.
Add the rest of the berries and the goji berry in the blender and blend again, until you get a third variety of puree.
In order to prepare the crust, pour all crust ingredients in a washed blender and blend until you get a doughy kind of texture. Then spread it in tart pans.
Take the bowl with the reddest puree and spread on top of each tart crust. Then repeat with the lighter red puree and finish on top with the pure mango puree.
Decorate with more berries.
Leave in fridge for a couple hours.
