Some time ago I prepared delicious tarts with raw nuts and banana cream filling. That is one of my favorite healthy recipes. The other day I stumbled upon another delicious tart recipe, but this time with peaches. So I decided to share with you this alternative.
Ingredients for 12 serving:
For the crust:
250 grams dates, pitted
250 grams cashews, raw and ground
250 grams walnuts, raw and ground
250 grams almond, raw and ground
1 table spoon ground cinnamon
1 table spoon. lemon zest
½ tsp. sea salt
For the filling:
Mascarpone
4 peaches
the juice of 1 lemon
Directions:
For the crust:
Grind all nuts in a nut grinder or in the blender.
Combine all the crust ingredients into the blender, until they are well combined.
You should get a doughy kind of texture.
Take your mini tart pans and divide the mixture, pressing the nut dough so it fits the shape of the tart pan.
Place in the tarts in the fridge.
For the filling:
Cut the peaches in half and remove the pit.
Slice the peaches long ways .
Take the tarts out of the fridge, spread mascarpone on top, then arrange the peaches. Sprinkle the lemon juice on top. Enjoy!
