When I was living in the United States I had one thing I totally loved to eat- the pumpkin pie with the cream. I used to eat the whole pie, and never left even a piece for my family! 😉 But since I now eat healthy, the pumpkin pie in its original recepie wouldn’t be a good choice. That’s why I decided to adjust the recepie and try a healthier one!
For the crust:
200 grams raw cashew (soak them in water for 2 hours)
100 grams dates without the pits
2 table spoons butter
1 table spoon honey(optional)
300 grams boiled pumpkin
1 table spoon cinnamon
You will need the help of your blender again! Take the cashews and blend them, till you get the texture of flour. Add the dates and blend them together with the cashew. After that put the melted butter and the cinnamon. Mix good.
Then boil the pumpkin.When the pumpkin is ready let it cool down for a while and then together with the apples put them in the blender. Belnd till you get a cream texture. Add the cinnamon and the vanilla, stir again.
Take a baking dish, put the mixture of the crust and spread it evenly. On top pour the filling. You can decorate with dried fruit or just have it like that!
